A golden, gently sweet rice dish infused with turmeric, cinnamon, and plump raisins.
South African Yellow Rice, known as Geelrys, is a colorful and aromatic side dish with a delicate balance of sweetness and warm spice. Turmeric gives the rice its rich golden hue, while cinnamon adds a comforting fragrance that makes every spoonful inviting.
Raisins bring little pockets of sweetness to the fluffy grains, and a garnish of almonds and fresh parsley adds texture and freshness. Simple yet distinctive, this rice is especially well suited to meals featuring richly spiced curries or roasted meats.
Ingredients
750 g basmati rice (4 cups), soaked for 30 minutes
3 tbsp butter
1 tsp turmeric
1 cinnamon stick
2 tbsp sugar
½ cup raisins
1 tsp salt
5½ cups hot water or chicken stock
Almonds, for garnish
Fresh parsley, for garnish
Method
Prepare the Rice: Wash the rice gently until the water becomes reasonably clear. Soak for 30 minutes, then drain thoroughly.
Melt the Butter and Add Spices: Melt the butter in a large pot over medium heat. Stir in the turmeric and cinnamon stick, allowing the warm spices to blend with the butter and release their fragrance.
Coat the Rice: Add the drained rice and stir gently until the grains are evenly coated with the golden butter mixture. This helps distribute the color and flavor throughout the dish.
Add the Liquid and Raisins: Pour in the hot water or chicken stock. Add the sugar, raisins, and salt, stirring gently to combine the ingredients.
Cook Until Tender: Cover the pot and cook over low heat for approximately 20 minutes, or until the rice has absorbed the liquid and the grains are tender. Avoid stirring too frequently so the rice cooks evenly.
Rest and Garnish: Turn off the heat and leave the pot covered for 10 minutes. Remove the cinnamon stick, fluff the rice gently with a fork, and garnish with almonds and fresh parsley before serving.
Serve
Serve Geelrys alongside Cape Malay curry, roast chicken, or grilled lamb for a satisfying meal. It also pairs beautifully with tomato sambal, which adds a fresh, tangy contrast to the rice’s gentle sweetness. The golden color and raisin-studded grains make it an attractive addition to a family-style table.
