Kurdish Dolma Rice

Kurdish Dolma Rice

A hearty Kurdish-style dish featuring seasoned rice, minced meat, fragrant herbs, and vegetables slowly cooked together with lemon-infused stock.

Kurdish Dolma Rice combines basmati rice with minced lamb or beef, onions, garlic, parsley, dill, and warm spices. The filling is enriched with tomato paste, cumin, paprika, and cinnamon, creating a savoury mixture with fresh herbal notes and gentle warmth.

Bell peppers, zucchini, and optional grape leaves are filled with the seasoned mixture and arranged tightly in a pot. As they cook slowly in stock and lemon juice, the flavours blend together and the rice becomes tender. The result is a comforting, colourful dish that brings together meat, rice, vegetables, and herbs in every serving.

Ingredients

  • 750 g basmati rice (4 cups), soaked for 30 minutes

  • 500 g minced lamb or beef

  • 1 onion, chopped

  • 3 garlic cloves, minced

  • ½ cup parsley, chopped

  • ¼ cup dill, chopped

  • 2 tbsp tomato paste

  • 6 bell peppers

  • 4 zucchini

  • 12 grape leaves (optional)

  • 1 tsp cumin

  • 1 tsp paprika

  • ½ tsp cinnamon

  • Salt and pepper, to taste

  • 3 cups stock

  • Juice of 1 lemon

Method

  1. Prepare the Rice: Wash the basmati rice thoroughly and soak it in water for 30 minutes. Drain well and set aside.

  2. Prepare the Filling: In a large bowl, combine the drained rice with the minced meat, chopped onion, garlic, parsley, dill, and tomato paste. Add the cumin, paprika, cinnamon, salt, and pepper. Mix thoroughly until the ingredients are evenly distributed.

  3. Stuff the Vegetables: Prepare the bell peppers and zucchini for stuffing. Fill them with the rice and meat mixture without packing it too tightly, leaving room for the rice to expand during cooking. If using grape leaves, place some filling on each leaf and roll it securely.

  4. Arrange in the Pot: Arrange the stuffed vegetables and grape leaves tightly in a large cooking pot so they remain in place while simmering.

  5. Add Stock and Cook: Pour the stock and lemon juice over the stuffed vegetables. Cover the pot and cook over low heat for 50–60 minutes, or until the rice and meat are thoroughly cooked and the vegetables are tender.

  6. Rest and Garnish: Remove the pot from the heat and let the dolma rest for 10 minutes. Carefully arrange the stuffed vegetables on a serving platter and garnish with fresh parsley and lemon.

Serve

Serve warm with plain yogurt, Kurdish salad, pickled vegetables, and fresh herbs. Add extra lemon wedges for a refreshing contrast to the rich meat and rice filling.
