French Herbed Chicken Pilaf

French Herbed Chicken Pilaf

A fragrant and comforting chicken pilaf infused with classic French herbs, buttery rice, and fresh lemon zest.

French Herbed Chicken Pilaf is a delicious one-pot dish that combines tender chicken thighs with basmati rice, aromatic garlic, and delicate herbs. Butter and olive oil create a rich base, while thyme, parsley, and bay leaf bring a gentle, savoury fragrance inspired by French home cooking.

As the rice cooks in chicken stock alongside the browned chicken, it absorbs the flavour of the herbs and seasonings. A finishing touch of fresh parsley and lemon zest adds brightness, making this dish perfect for family dinners and special gatherings.

Ingredients

  • 750 g basmati rice (4 cups), soaked for 20 minutes

  • 1 kg chicken thighs

  • 3 tbsp butter

  • 1 tbsp olive oil

  • 2 shallots or onions, finely chopped

  • 3 garlic cloves, minced

  • 1 tsp thyme

  • 1 tsp parsley

  • 1 bay leaf

  • Salt and black pepper, to taste

  • 5½ cups chicken stock

  • Lemon zest, for garnish

Method

  1. Wash and Soak the Rice

Wash the basmati rice thoroughly and soak it in water for 20 minutes. Drain well and set aside.

  2. Brown the Chicken

Heat the butter and olive oil in a large, heavy-bottomed pot over medium heat. Add the chicken thighs and brown them on all sides to develop a rich, savoury flavour.

  3. Sauté the Shallots and Garlic

Add the chopped shallots or onions and minced garlic to the pot. Sauté until softened and fragrant, stirring occasionally to prevent the garlic from burning.

  4. Add Rice and Herbs

Add the drained rice, thyme, parsley, and bay leaf. Stir gently so the rice is coated with the buttery mixture and the herbs are evenly distributed.

  5. Cook with Chicken Stock

Pour in the chicken stock and season with salt and black pepper. Return the chicken to the pot if needed, cover, and cook over low heat for approximately 20 minutes, until the rice is tender and the chicken is thoroughly cooked.

  6. Rest and Garnish

Turn off the heat and leave the pot covered for 10 minutes. Remove the bay leaf, fluff the rice gently, and finish with fresh parsley and lemon zest.

Serve

Serve French Herbed Chicken Pilaf hot with roasted vegetables, green beans, Dijon-style salad, and garlic mushrooms. The fresh lemon zest complements the buttery rice and aromatic herbs beautifully.
