Egyptian Sayadiya Rice

Egyptian Sayadiya Rice

A traditional Egyptian fish and rice dish featuring deeply caramelized onions, fragrant spices, and a rich, savoury broth.

Egyptian Sayadiya Rice is a flavourful coastal-style dish that combines tender white fish with basmati rice cooked in an aromatic onion-infused stock. The defining feature is the use of caramelized onions, which lend the rice its characteristic deep colour and rich, slightly sweet flavour.

Cumin, coriander, turmeric, and black pepper season the fish and rice, creating a balanced savoury taste. Golden pan-fried fish is served over the fragrant rice, while crispy fried onions, fresh parsley, and lemon add texture, freshness, and a bright finishing touch.

Ingredients

  • 750 g basmati rice (4 cups), soaked for 30 minutes

  • 1 kg firm white fish

  • 2 tbsp oil

  • 3 large onions, sliced

  • 4 garlic cloves, minced

  • 1 tsp cumin

  • 1 tsp coriander

  • ½ tsp turmeric

  • ½ tsp black pepper

  • Salt, to taste

  • 5½ cups fish stock

  • Fresh parsley, for garnish

  • Fried onions, for topping

  • Lemon, for serving

Method

  1. Prepare the Rice: Wash the basmati rice thoroughly and soak it in water for 30 minutes. Drain and set aside.

  2. Caramelize the Onions: Heat the oil in a large pot and add the sliced onions. Cook slowly until deeply golden and caramelized. Blend half of the caramelized onions with the fish stock to create a flavourful onion-infused broth.

  3. Season and Fry the Fish: Season the firm white fish with cumin, coriander, turmeric, black pepper, and salt. Pan-fry until golden and cooked through. Remove and set aside.

  4. Prepare the Rice Base: In the remaining onions, sauté the minced garlic until fragrant. Add the drained rice and stir gently so the grains become coated with the onion and garlic mixture.

  5. Cook the Rice: Pour in the onion-infused fish stock and bring it to a boil. Cover, reduce the heat to low, and cook for approximately 20 minutes, or until the rice is tender and has absorbed the liquid.

  6. Rest and Garnish: Remove the pot from the heat and let the rice rest for 10 minutes. Fluff gently with a fork and arrange the cooked fish on top. Finish with crispy fried onions, fresh parsley, and lemon.

Serve

Serve warm with tahini sauce, Egyptian salad, and pickles. Add lemon wedges at the table to complement the savoury fish and richly flavoured onion rice.
