Afghan Shola-e-Pulao

Afghan Shola-e-Pulao

A rich Afghan rice speciality combining tender lamb, sweet carrots, dried fruits, and fragrant spices.

Afghan Shola-e-Pulao is a hearty rice dish that brings together basmati rice and slow-cooked lamb with the warmth of cumin, coriander, cinnamon, and cardamom. The lamb is simmered with onions, ginger, garlic, and spices until tender, creating a flavourful stock that gives the rice its savoury depth.

The dish is finished with a colourful topping of carrots, raisins, almonds, and pistachios, lightly cooked with sugar. This combination of tender meat, aromatic rice, sweet fruit, and crunchy nuts creates a satisfying balance of flavours and textures, making it suitable for family gatherings and special occasions.

Ingredients

  • 750 g basmati rice (4 cups), soaked for 30 minutes

  • 1 kg lamb

  • 3 tbsp oil

  • 2 onions, sliced

  • 1 tbsp ginger, minced

  • 4 garlic cloves, minced

  • 1 tsp cumin

  • 1 tsp coriander

  • ½ tsp cinnamon

  • 4 cardamom pods

  • Salt and pepper, to taste

  • 2 carrots, cut into thin strips

  • ½ cup raisins

  • ¼ cup almonds

  • ¼ cup pistachios

  • 2 tbsp sugar

  • 5½ cups lamb stock

Method

  1. Wash and Soak the Rice
Rinse the basmati rice thoroughly and soak it for 30 minutes. Drain and set aside.

  2. Cook the Lamb with Spices
Heat the oil in a large pot. Add the lamb, sliced onions, ginger, garlic, cumin, coriander, cinnamon, cardamom, salt, and pepper. Brown the lamb and cook the ingredients together briefly. Add water and simmer for 50–60 minutes, or until the lamb becomes tender.

  3. Prepare the Stock and Topping
Reserve 5½ cups of lamb stock for cooking the rice. In a separate pan, fry the carrot strips with the sugar. Add the raisins, almonds, and pistachios, and cook until the topping is lightly fried and fragrant.

  4. Cook the Rice
Place the drained rice in a pot with the reserved lamb stock. Bring to a boil, then cover and cook over low heat for approximately 20 minutes, until the rice is tender and the liquid has been absorbed.

  5. Layer the Lamb and Steam
Arrange the cooked lamb over the rice and steam together for another 5 minutes, allowing the flavours to blend.

  6. Garnish and Serve
Finish the pulao with the prepared carrot, raisin, almond, and pistachio topping. Serve hot while the rice is fluffy and the lamb is tender.

Serve

Serve Afghan Shola-e-Pulao with cucumber yogurt, Afghan salad, mint chutney, and lemon wedges. The cool yogurt and fresh salad complement the rich lamb, while the mint and lemon provide a refreshing contrast to the sweet, spiced rice.
