Hyderabadi Dum Biryani

Hyderabadi Dum Biryani

A Regal Classic of Fragrant Rice and Tender Meat

Hyderabadi Dum Biryani is a rich and aromatic rice dish known for its beautifully layered flavours, tender meat and fragrant long-grain rice. Marinated meat is combined with aromatic spices, yogurt, fried onions, fresh herbs and saffron, creating a deeply flavourful base that pairs perfectly with delicately spiced rice.

The biryani is traditionally assembled in layers and cooked slowly over low heat, allowing the meat to become tender while the rice absorbs the rich flavours and aromas beneath it. The gentle dum cooking brings together the spices, herbs, saffron and fried onions, resulting in a fragrant and satisfying dish with every layer offering a perfect balance of savoury, aromatic and mildly spicy flavours.

Ingredients

  • 750 g basmati rice

  • 1 kg chicken or mutton, cut into medium-sized pieces

  • 1 cup thick yogurt

  • 2 tablespoons ginger-garlic paste

  • 2–3 green chillies, slit

  • 2 teaspoons red chilli powder

  • 1 teaspoon turmeric powder

  • 1 teaspoon garam masala

  • 1 teaspoon cumin powder

  • 1 teaspoon coriander powder

  • 1 teaspoon biryani masala

  • Salt, to taste

  • 2 tablespoons lemon juice

  • ½ cup fresh coriander, chopped

  • ½ cup fresh mint leaves

  • 4–5 onions, thinly sliced and fried until golden

  • 4–5 green cardamom pods

  • 4–5 cloves

  • 1–2 cinnamon sticks

  • 2 bay leaves

  • 1 star anise

  • 1 cup milk

  • A generous pinch of saffron

  • 4–5 tablespoons ghee

  • Oil, for cooking and frying

  • Water, as required

Method

  1. Begin by preparing the meat marinade. Place the chicken or mutton in a large bowl and add yogurt, ginger-garlic paste, red chilli powder, turmeric, garam masala, cumin powder, coriander powder, biryani masala, salt and lemon juice.

  2. Add the slit green chillies, chopped coriander, fresh mint and some of the fried onions. Mix everything thoroughly so the meat is evenly coated with the marinade. Allow it to rest so the spices and yogurt can properly flavour the meat.

  3. Wash the basmati rice gently until the water becomes reasonably clear. Soak it for around 30 minutes and then drain well.

  4. Bring a large pot of water to a boil and add salt along with cardamom, cloves, cinnamon, bay leaves and star anise. Add the soaked rice and cook it until the grains are partially cooked but still firm. Drain the rice carefully and keep it aside.

  5. Heat a heavy-bottomed pot and place the marinated meat at the bottom. Spread it evenly across the base so that it cooks properly during the dum process.

  6. Spread the partially cooked rice evenly over the marinated meat. Add layers of the remaining fried onions, fresh mint and coriander. Drizzle melted ghee over the rice to enrich the flavour and aroma.

  7. Warm the milk and add the saffron, allowing the colour and aroma to develop. Drizzle the saffron milk evenly over the top layer of rice.

  8. Cover the pot tightly so that the steam remains inside. Cook the biryani over low heat, allowing the meat and rice to cook together slowly. This gentle dum cooking allows the flavours from the meat, spices, herbs and saffron to blend throughout the layers.

  9. Once the meat is tender and the rice is completely cooked, switch off the heat and allow the biryani to rest for a few minutes. Open the pot carefully and gently fluff the upper layers without breaking the rice grains.

  10. Serve the biryani hot, making sure to take portions from the bottom as well as the top so that the tender meat, aromatic rice, fried onions and herbs are evenly combined in every serving.

Serve

Serve Hyderabadi Dum Biryani with mirchi ka salan, cool cucumber raita, sliced onions and lemon wedges. The creamy raita and tangy accompaniments provide a refreshing contrast to the rich, warmly spiced biryani, while mirchi ka salan adds another layer of flavour and heat.

For a traditional family-style presentation, serve the biryani directly on a large platter and garnish it with fresh coriander, mint and a few golden fried onions. Pair it with the accompaniments on the side for a complete and satisfying meal.
