Italian Chicken Risotto – Basmati Style

Italian Chicken Risotto – Basmati Style

A creamy Italian-inspired rice dish with tender chicken, Parmesan cheese, and fragrant herbs.

Italian Chicken Risotto – Basmati Style brings together tender chicken breast, basmati rice, butter, and olive oil for a comforting and flavourful meal. Garlic and onion create a savoury foundation, while oregano adds a gentle herbal aroma to the dish.

Hot chicken stock is gradually incorporated as the rice cooks, helping it develop a creamy texture. Cooking cream and Parmesan cheese are stirred in at the end for a rich, velvety finish, while fresh parsley adds colour and freshness. This dish is perfect for a cosy family dinner or a special meal at home.

Ingredients

  • 750 g basmati rice (4 cups), soaked for 20 minutes

  • 700 g chicken breast, cut into bite-sized pieces

  • 3 tbsp butter

  • 1 tbsp olive oil

  • 1 onion, finely chopped

  • 3 garlic cloves, minced

  • 1 tsp oregano

  • ½ tsp black pepper

  • Salt, to taste

  • 5½ cups hot chicken stock

  • ½ cup cooking cream

  • ½ cup Parmesan cheese

  • Fresh parsley, for garnish

Method

  1. Wash and Soak the Rice

Wash the basmati rice thoroughly and soak it in water for 20 minutes. Drain well and set aside.

  2. Cook the Chicken

Heat the butter and olive oil in a large, deep pan over medium heat. Add the chicken pieces and cook until golden. Add the chopped onion and minced garlic, then sauté until softened and fragrant.

  3. Add the Rice and Oregano

Stir in the drained rice and oregano. Cook for approximately 2 minutes, stirring gently so the rice is coated with the buttery mixture.

  4. Gradually Add the Chicken Stock

Add the hot chicken stock gradually, stirring occasionally as the rice absorbs the liquid. Continue cooking for approximately 20–25 minutes, adding the stock progressively until the rice is tender and the mixture develops a creamy consistency.

  5. Stir in Cream and Parmesan

Add the cooking cream and Parmesan cheese. Stir gently and cook for another 2 minutes, allowing the cheese to melt and the flavours to combine.

  6. Garnish and Serve

Remove the pan from the heat and garnish with fresh parsley. Serve immediately while the risotto is warm and creamy.

Serve

Serve Italian Chicken Risotto with garlic bread, roasted vegetables, Caesar salad, and lemon wedges. The fresh lemon adds a bright contrast to the creamy Parmesan and tender chicken.
