German Mushroom Pilaf

German Mushroom Pilaf

A rich and aromatic mushroom pilaf featuring buttery rice, golden mushrooms, and fragrant herbs.

German Mushroom Pilaf is a comforting rice dish that combines basmati rice with earthy mushrooms, sautéed onions, and garlic. Butter and olive oil create a savoury base, while thyme and paprika add a delicate herbal aroma and gentle warmth.

The rice slowly absorbs the vegetable or chicken stock, allowing the mushroom flavours to blend beautifully throughout the dish. Finished with fresh parsley and optional Parmesan cheese, this pilaf makes a satisfying meal or a flavourful side dish for family gatherings.

Ingredients

  • 750 g basmati rice (4 cups), soaked for 20 minutes

  • 500 g mushrooms, sliced

  • 3 tbsp butter

  • 1 tbsp olive oil

  • 2 onions, chopped

  • 3 garlic cloves, minced

  • 1 tsp thyme

  • ½ tsp paprika

  • Salt and black pepper, to taste

  • 5½ cups vegetable or chicken stock

  • Fresh parsley, for garnish

  • Parmesan cheese, optional

Method

  1. Wash and Soak the Rice

Wash the basmati rice thoroughly and soak it in water for 20 minutes. Drain well and set aside.

  2. Sauté the Onions and Garlic

Heat the butter and olive oil in a large pot over medium heat. Add the chopped onions and minced garlic, then sauté until softened and fragrant.

  3. Brown the Mushrooms

Add the sliced mushrooms and cook until they soften and develop a golden-brown colour. Stir occasionally to help them cook evenly and release their flavour.

  4. Season with Herbs and Spices

Add the thyme, paprika, salt, and black pepper. Mix well so the mushrooms and aromatics are evenly coated with the seasonings.

  5. Add Rice and Stock

Stir in the drained rice, then pour in the vegetable or chicken stock. Bring the mixture to a gentle simmer, cover the pot, and cook over low heat for approximately 20 minutes, until the rice is tender and the liquid has been absorbed.

  6. Rest and Garnish

Turn off the heat and leave the pilaf covered for 10 minutes. Fluff the rice gently with a fork and garnish with fresh parsley and optional Parmesan cheese.

Serve

Serve German Mushroom Pilaf with grilled chicken, roasted vegetables, a fresh green salad, and garlic butter. Parmesan cheese adds an extra savoury touch, while the fresh salad balances the rich, buttery mushrooms.
