A fragrant East African rice dish featuring tender beef, deeply browned onions and warming spices.
Ugandan Pilau Rice is a hearty and aromatic dish made with basmati rice, beef and a carefully balanced blend of spices. The onions are fried until deeply golden, creating a rich base that complements the earthy flavours of cumin, coriander, cardamom, cinnamon and cloves.
The beef is simmered in stock until tender, allowing the spices to infuse the broth before the rice is added. Cooked together in one pot, the rice absorbs the savoury stock and develops a deep flavour, while fresh coriander adds a bright finishing touch.
Ingredients
750 g basmati rice (4 cups), soaked for 30 minutes
1 kg beef
3 tbsp oil
3 onions, sliced
1 tbsp ginger paste
1 tbsp garlic paste
2 tsp cumin
1 tsp coriander
1 tsp cardamom
½ tsp cinnamon
½ tsp black pepper
4 cloves
Salt, to taste
5½ cups beef stock
Fresh coriander, for garnish
Method
Wash and Soak the Rice
Wash the basmati rice thoroughly and soak it for 30 minutes. Drain the water and set the rice aside.
Fry the Onions Deeply
Heat the oil in a large, heavy-bottomed pot. Add the sliced onions and fry until deeply golden, allowing them to develop the rich colour and flavour that form the base of the pilau.
Add the Beef and Spices
Stir in the ginger paste and garlic paste. Add the beef, cumin, coriander, cardamom, cinnamon, black pepper, cloves and salt. Cook for about 10 minutes, stirring well to coat the beef evenly with the spices.
Simmer Until Tender
Pour in the beef stock and bring the mixture to a gentle simmer. Cook for approximately 40 minutes, or until the beef is tender and the stock has absorbed the flavours of the meat and spices.
Add the Rice
Stir the drained rice into the beef and stock, distributing it evenly throughout the pot so it cooks in the seasoned liquid.
Cook on Low Heat
Cover the pot tightly and cook over low heat for 20 minutes, or until the rice is tender and has absorbed the stock. Keep the lid closed as much as possible during cooking.
Rest and Garnish
Turn off the heat and let the pilau rest, covered, for 10 minutes. Gently fluff the rice and garnish with fresh coriander before serving.
Serve
Serve hot with kachumbari, chilli sauce, avocado and grilled meat or chicken. The fresh salad and creamy avocado complement the warm spices and savoury beef, making this pilau a satisfying meal for family gatherings or special occasions.
