South African Durban Chicken Biryani

South African Durban Chicken Biryani

A richly spiced layered biryani with tender chicken, fragrant herbs, and golden saffron rice.

South African Durban Chicken Biryani is a flavorful rice dish built around aromatic spices, yogurt-marinated chicken, and carefully layered rice. Durban biryani masala, chilli powder, turmeric, cumin, and whole spices create a deep, warming flavor with a gentle chilli kick.

The layers of chicken and partially cooked rice are finished with fried onions, fresh mint, coriander, and saffron-infused milk. Slow cooking allows the flavors to mingle while the rice finishes steaming, creating a fragrant and satisfying dish with colorful layers and a deliciously spiced aroma.

Ingredients

  • 750 g basmati rice (4 cups), soaked for 30 minutes

  • 1 kg chicken

  • 3 tbsp oil

  • 2 potatoes, cut into pieces

  • 2 onions, chopped

  • 1 cup yogurt

  • 1 tbsp ginger paste

  • 1 tbsp garlic paste

  • 2 tsp Durban biryani masala

  • 1 tsp chilli powder

  • 1 tsp turmeric

  • 1 tsp cumin

  • 4 cardamom pods

  • 4 cloves

  • 1 cinnamon stick

  • Salt, to taste

  • ½ cup fried onions

  • ½ cup fresh mint

  • ½ cup fresh coriander

  • A pinch of saffron mixed with 3 tbsp warm milk

Method

  1. Prepare the Rice: Wash the rice thoroughly and soak it for 30 minutes. Drain and set aside while preparing the chicken and potatoes.

  2. Fry the Potatoes: Heat some of the oil in a large pot and lightly fry the potato pieces until they begin to turn golden. Remove them and set aside for layering later.

  3. Cook the Chicken Masala: In the same pot, cook the chopped onions until softened. Add the ginger paste, garlic paste, chicken, yogurt, Durban biryani masala, chilli powder, turmeric, cumin, cardamom, cloves, cinnamon, and salt. Stir well and cook for approximately 20 minutes, allowing the chicken to absorb the spices.

  4. Parboil the Rice: Bring a pot of water to a boil and add the drained rice. Cook for 6–7 minutes, until the grains are about 70% cooked but still firm. Drain immediately to prevent the rice from becoming too soft.

  5. Layer the Biryani: Arrange the cooked chicken masala and fried potatoes in the pot, then spread the partially cooked rice over the top. Sprinkle with fried onions, fresh mint, and coriander. Drizzle the saffron-infused warm milk evenly over the rice.

  6. Steam on Low Heat: Cover the pot tightly and cook over low heat for approximately 25 minutes. This slow steaming process, known as dum, allows the rice to finish cooking while absorbing the aromas of the chicken, spices, and herbs.

  7. Rest and Serve: Turn off the heat and leave the biryani covered for 10 minutes. Gently fluff the rice and serve the layers together, taking care not to break the grains.

Serve

Serve Durban Chicken Biryani with cool cucumber raita to balance the spices, tomato-onion sambal for freshness, and pickles for a tangy contrast. Boiled eggs make a traditional-style accompaniment and complete the meal with additional texture and richness.
