Qatari Chicken Machboos

Qatari Chicken Machboos

A Traditional Qatari Favorite with Deep Spice and Citrus Notes

Qatari Chicken Machboos is a satisfying rice dish built around tender chicken, aromatic spices, tomatoes and dried black lime. The combination creates a warm, savory flavor with a subtle citrusy tang, while the slow cooking allows the chicken to become tender and the broth to develop a rich depth.

The rice is cooked directly in the seasoned chicken broth, allowing it to absorb the flavors of the spices and roasted chicken. Sweet raisins and crunchy almonds add contrasting textures, while fresh coriander brings a light herbal finish to this comforting and generous dish.

Ingredients

  • 750 g basmati rice (4 cups), soaked for 30 minutes

  • 1 whole chicken (1.2–1.5 kg), cut into pieces

  • 3 tbsp ghee

  • 2 onions, chopped

  • 4 garlic cloves

  • 2 tomatoes, chopped

  • 2 tsp baharat

  • 1 tsp cumin

  • 1 tsp coriander

  • ½ tsp turmeric

  • ½ tsp cinnamon

  • 2 dried black limes

  • Salt and black pepper, to taste

  • 5½ cups chicken stock

  • ¼ cup raisins

  • ¼ cup almonds

  • Fresh coriander, for garnish

Method

  1. Prepare the rice: Wash the rice gently and soak it for 30 minutes. Drain well and keep aside.

  2. Brown the chicken: Heat the ghee in a large heavy-bottomed pot. Add the chicken pieces and brown them well, allowing the outside to develop a rich golden color.

  3. Build the base: Add the chopped onions, garlic and tomatoes. Cook for about 5 minutes until the onions soften and the tomatoes begin to break down.

  4. Add the spices: Stir in the baharat, cumin, coriander, turmeric, cinnamon, salt and black pepper. Add the dried black limes and mix well so the spices coat the chicken and vegetables.

  5. Simmer the chicken: Pour in the chicken stock, cover the pot and simmer for about 25 minutes, allowing the chicken to become tender and the broth to take on the full flavor of the spices.

  6. Reserve the broth: Remove the cooked chicken pieces from the pot and keep the flavorful broth in the pan. This broth will become the cooking liquid for the rice.

  7. Cook the rice: Add the drained rice to the broth. Cover and cook over low heat until the rice is tender and has absorbed the aromatic stock.

  8. Add the raisins: During the final 5 minutes of cooking, add the raisins so they soften slightly and contribute a gentle sweetness to the rice.

  9. Roast the chicken: Roast the cooked chicken pieces until they become golden on the outside and develop a lightly crisp finish.

  10. Assemble the dish: Transfer the cooked rice to a large serving platter and arrange the roasted chicken over it. Finish with toasted almonds and fresh coriander.

Serve

Serve Qatari Chicken Machboos warm with daqqus, cucumber yogurt, Arabic salad and warm khubz. The cooling yogurt and fresh salad balance the spices, while daqqus adds a bright and lively contrast to the rich chicken and seasoned rice.
